Apple Zucchini Chocolate Cake GF

Ingredients

1 egg
1/2 cup coconut sugar
1 cup rice grits or white corn meal
1 cup chopped walnuts or pecans
1 cup milk (or coconut milk)
1/2 cup olive oil
1-2 Tbsp GF flour
2 tsp baking powder (aluminum free)
5 grated organic apples
1 grated zucchini
pinch of salt
3-4 oz (100g) dark chocolate

Directions

Mix all the ingredients (except the chocolate) with the mixer: first mix the eggs, milk, sugar and oil, than add GF flour, rice grits, baking powder, pinch of salt and at the end just stir in apples and zucchini.

Pour it in the oiled square or rectangle pan and bake at 400F (200C) until edges just start to get golden, about 20 min ( you can check with a tooth pick if ready - dip one wooden toothpick in a dough and if nothing sticks to it when removed- your cake is ready)

Melt the chocolate with a pinch of salt and 1 Tbsp oil and pour it over the hot cake. You may serve it warm or cold.
