Raw Mint Chard Cake

Ingredients

Base layer

50g almonds, ground
50g (2 Tbsp) coconut flour
8 dates
salt to taste
1/ cup milk
1 Tbsp mint

Green Mid Layer

150g (1 1/2 cups) cashews, raw and soaked
2 Tbsp coconut oil
2 Tbsp raw honey or coconut sugar
1 bunch Swiss chard or spinach
1 handful fresh mint leaves
2 Tbsp dry mint

Choco top cover

4 Tbsp coconut oil
3 oz (100g) dark chocolate
salt to taste

Directions

Base Layer: warm up milk with 2 Tbsp of dry mint and cook it for a few minutes, than leave to side. In a Blender, blend grind almonds, dates salt coconut flour and 2-4 Tbsp of minted milk you previously made. Spread it over the bottom of the smaller rectangle shaped dish, to be 0.2 inches thick (5mm).

Green Mid Layer: Soak the cashews overnight and dry them on the paper towel the next day. Warm up coconut oil and add fresh chopped mint leaves, and cook it for 1-2 min. In a blender, mix this coconut oil mint combo with cashews, salt (to taste) vanilla pod, raw honey or coconut sugar, chard and dry mint. Blend it all till homogenous and spread over your base layer.

Choco Top Layer: melt chocolate and coconut oil and pinch of salt and spread as a top layer over your cake.

Place it in a freezer for 20- 30 minutes, than get it out and cut into small squares and store in fridge till ready to serve.

 

Benefits

Swiss Chard: contains an antioxidant known as alpha-lipoic acid, which has been shown to lower glucose levels, increase insulin sensitivity and prevent oxidative stress-induced changes in patients with diabetes.

Studies on alpha-lipoic acid have also shown decreases in peripheral neuropathy or autonomic neuropathy in diabetics.  Also , chard is packed with minerals like magnesium, potassium and calcium which can help to lower blood pressure down. I cup of chard has more calcium than 1 cup of milk, so I always suggest greens over milk as far as calcium goes. It also contains chlorophyll, which has shown to be effective at blocking the cancer-causing heterocyclic amines generated when grilling foods at a high temperature.

Mint: promotes digestion big time, so this cake will be a light bite to your belly. It is also helps relax muscles, has anti parasitic and antibacterial properties, and is rich in antioxidants.

Cashews: are rich in selenium, copper, magnesium and calcium which are all minerals necessary for maintenance of our  health. Copper will help to give color back to your hair, and magnesium to maintain good blood pressure levels. Also, cashews are good as a weight loss diet since they contain good cholesterol to keep you satiated and energized and not crave foods.
