Corn Bread GF


2 eggs
13 Tbsp corn meal (non GMO)
1 Tbsp oat flour GF
1/2 cup olive oil
1-2 cups mineral water
2 tsp baking powder (aluminum free)
1/2 tsp salt (to taste)
1/2 feta cheese (crumbled)
toasted sesame seeds or
chia, flex seeds






Mix with mixer the eggs till smooth and than start adding the rest of the ingredients. At the end, add feta cheese and stop mixing.

Preheat the oven to 400F (200C)

Pour the mass into oiled and flour (GF) dusted pan and sprinkle with sesame seeds or chia, flax on the top

Bake until edges golden and not sticking to the sides of the pan.


You may sprinkle sun dried tomatoes and basil / oregano on the top of the cornbread instead sesame seeds and than bake it.

For the purple corn bread you may have noticed on the photo, I used peruvian purple corn flour. It gives it a really nice look and is impressive contrast to the yellow one.
