2 1/2 cups (450g) white bread flour
2 Cups (200g) semolina flour
1 1/4 tsp sea salt
2 tsp dried yeast
1 Tbsp brown sugar
1 1/4 cup lukewarm water
2 tsp olive oil (to grease the surface)

Tomato Sauce

1 clove garlic
1 small bunch fresh basil
olive oil
14 oz (400g) fresh or canned tomatoes
sea salt to taste
ground pepper to taste


1 medium ball (85g) mozzarella
extra virgin olive oil
prosciutto ham
any other toping you like
fresh basil (when done)


To Make Sauce:

Place a large non-stick frying pan on the heat and pour in 4 generous lugs of olive oil. Add the garlic, shake the pan around a bit and, once the garlic begins to colour lightly, add the basil and the tomatoes. Using the back of a wooden spoon, mush and squash the tomatoes as much as you can. Ad salt and pepper to taste and as soon as it boils, blend it in blender ( You may add a medium zucchini or spinach when blending to add more vegetables for peaky eaters)

When all blended, pour it back to he pot and simmer until it concentrated. You will have plenty of sauce so you can freeze a part of it for the next time.



Pile flour and salt on a dry surface and make 7 inch well in the center.
Mix yeast, sugar and warm water in a cup and let it rise for a few minutes, than pour it into the well.

With fork, bring in flour from inner edge in a circular motion and mix it slowly until all ingredients come together, than use hands to knead it for 10 more minutes.

Place dough in slightly oiled bowl, cover with plastic wrap and let it double in size x 45 min.

Divide dough in half, than each half divide in 2 more (total of 4) and make small balls or freeze 1 half for later.Sprinkle dough balls with flour and cover with plastic wrap. Let it rest and grow for 15 min.

Dust the surface with flour and roll each ball flat, 1/4 inch thick (for thinner crust make it less).

Cover your baking sheet (pizza pan) with baking paper (or foil), rub olive oil over it and dust with flour (or corn flour), than place your pizza on the top. Put desired toppings: tomato sauce first, than anything you desire and on the top - put your basil and mozzarella.

Preheat oven to 500F (250C) and bake your pizza 7 to 10 min max.
