Ingredients

Crust

1 cup almonds or pecans
2 Tbsp coconut oil
4 dates (soaked to soften,chopped)
1/4 cup coconut flour
1 Tbsp lime juice
pinch salt

Filling

1 cup cashews, soaked
3/4 cup coconut milk
1/4 cup coconut oil
3-4 large limes
1 Tbsp lime zest
5 dates, soaked to soften
coconut sugar to taste

Key Lime Pie

Directions

For Crust

Blend almonds (nuts), coconut flour, and salt together, then add chopped dates, coconut oil, and lime juice. Blend until smooth. Distribute the mixture evenly on the bottom of your muffin cups or pie pan. Press down with a glass or spoon to flatten the crust.

For Filling:

To make the filling, soak the cashews for a few hours, then drain and put them into your blender along with all the other filling ingredients. Blend on high until the mixture becomes creamy and smooth. Taste and adjust the flavor as needed, adding more lime zest or juice for a more tart flavor, or more coconut sugar for added sweetness.

Pour the filling into muffin tins or a pie pan, and tap on the counter to release any air bubbles. Top with a bit more lime zest and loosely cover.

Freeze the dessert for 2-4 hours or until firm. Before serving, remove it from the freezer and let it thaw for 10-15 minutes.

Feel free to add whipped cream on top or sprinkle with chopped nuts if you like.
