Sweets – recipes



1 cup almonds or pecans
2 Tbsp coconut oil
4 dates (soaked to soften,chopped)
1/4 cup coconut flour
1 Tbsp lime juice
pinch salt


1 cup cashews, soaked
3/4 cup coconut milk
1/4 cup coconut oil
3-4 large limes
1 Tbsp lime zest
5 dates, soaked to soften
coconut sugar to taste

Key Lime Pie


For Crust

Blend all together almonds (nuts), coconut flour, salt and than add chopped dates, coconut oil and lime juice. Blend till smooth. Distribute evenly on the bottom of your muffin cups or bottom of your pie pen. Press down with a glass or spoon to flatten.

For Filling:

Soak the cashews for a few hours, drain and put into your blender together with all other filling ingredients. Blend on high until creamy and smooth. Taste and adjust flavor as needed, adding more lime zest/juice for more tart, or more coconut sugar for added sweetness.

Pour filling into muffin tins or pie pan, and tap on counter to release air bubbles. Top with a bit more lime zest and loosely cover.

Freeze for 2-4 hours or until firm. Remove from the freezer for 10-15 minutes to thaw before serving.

May add whipped cream on the top or chopped nuts if you like.

Scientists noted that in several West African villages where cholera epidemics had occurred, lime juice included in the diet protected against cholera, a deadly bacteria-activated disease.
