Ingredients

4 sweet red (banana) peppers
2 eggs
1/2 lb feta cheese
Salt and peper to taste

Optional:
oregano, basil, sun dried tomatoes, capers

Directions

Scramble the eggs and add the cheese, salt, and pepper. You may optionally add any other spice/herb you desire, such as mushrooms (see suggestions). When all ingredients are mixed, put them on a slightly oiled heated pan and stir constantly for 1-2 minutes until the mixture starts to thicken.

Peppers stuffed with egg and feta

Then, remove from the heat and let it cool down. This will be your pepper stuffing.

Cut off the pepper tops and set them aside. De-seed your peppers and stuff them with the already prepared stuffing. Use toothpicks to attach the pepper tops back onto the peppers.

Heat an iron cast pan or use a regular pan with a bit of olive oil and fry/grill your peppers on both sides until they reach a dark red color, but be careful not to burn them (about 3 minutes per side).

Serve right away while warm, although you may enjoy them cold as well.
