Waffles GF

Ingredients

2 free range eggs
3 Tbsp butter (or olive oil or coconut oil)
1/4 tsp sea salt
1 pod or 1/2 tsp liquid vanilla
2 tsp baking powder (aluminum free)

1 1/4 (300ml) whole milk/coconut milk
Lemon zest from 1 lemon
1 tsp maca powder
1 Tbsp chia seed
2 cups (230g) GF flour
(for these I used peruvian purple corn flour)

Directions

Mix everything in the blender, and when done, leave it in the fridge for 20-30 minutes. You may stir in a cup of cooked quinoa or kaniwa. Pour into the waffle machine and make waffles.
