1 cauliflower
1/2 cup GF flour
1 egg
1 Tbsp soaked chia seeds
1 cup (200g) shredded cheese
pinch salt
1 tsp oregano
pinch cayenne pepper
1 can tomato paste
1 medium ball mozzarella
peppers, mushrooms, zucchini ,fresh tomato
basil

Direcitons
Preheat the oven to 425F (220C)
Steam the cauliflower, and once it is thoroughly dry, blend it in a blender. Mix the blended cauliflower with chia seeds, oregano, shredded cheese, salt, egg, and gluten-free flour. Knead the mixture well and flatten it into a 1/4 inch circular layer.
After baking it plain for 15-20 minutes until golden brown, remove it from the oven and spread a mixture of tomato paste, basil, oregano, salt, and pepper over the cauliflower crust.
Add your desired toppings, then place mozzarella and basil on top. Return the pizza back into the oven for 15-20 more minutes until the cheese melts and the veggies bake.
Benefits
Cauliflower is not usually the first veggie that kids pick to eat, but there you go – use it as pizza dough! It is rich in B vitamins, antioxidants, has anticancer benefits, and promotes digestion, to name a few.
Kids love pizza, and so do adults. If you have a picky eater, this may be a great way to pack in lots of nutrients from veggies that would otherwise go uneaten.
