2 free range eggs
3 Tbsp butter (or olive oil or coconut oil)
1/4 tsp sea salt
1 pod or 1/2 tsp liquid vanilla
2 tsp baking powder (aluminum free)
1 1/4 (300ml) whole milk/coconut milk
Lemon zest from 1 lemon
1 tsp maca powder
1 Tbsp chia seed
2 cups (230g) GF flour
(for these I used peruvian purple corn flour)
Mix everything in the blender, and when done, leave it in the fridge for 20-30 minutes. You may stir in a cup of cooked quinoa or kaniwa. Pour into the waffle machine and make waffles.
Maca: will give you strength and energy, and in this recipe it makes the waffles a good breakfast fuel. Maca supplies iron and helps restore red blood cells, which helps with anemia and cardiovascular diseases. It keeps your bones and teeth healthy and allows you to heal from wounds more quickly.
